Mexican Chicken Burritos
Ingredients
500g thigh fillets, diced
1 carrot, diced
1 zucchini, diced
1 red and green capsicum, diced
1 onion, diced
1 can of corn kernels, drained
1 tablespoon of lemon or lime juice
2 tablespoon coriander, chopped
2 tablespoons olive oil
3 teaspoons Screaming Seeds Taco + Burrito Seasoning
1x packet of Burrito wraps or Taco shells
1 garlic clove, crushed
Method
- Place oil in a warmed pan with onions and garlic, cook until soft
- Add thigh fillets, stir occasionally until chicken is almost cooked
- Add diced vegetables and corn stir for 2-3 minutes
- Add juice of lemon or lime and Screaming Seeds Taco + Burrito Seasoning
- Stir until chicken and vegetables are cooked through (you may add extra Taco mix if needed)
- Stir through coriander
- Serve in burritos or taco shells with your favourite salad ingredients
